Would you like to cook a pork roast that will make your mother-in-law turn green with envy? Follow these guidelines and you can put dried out and tasteless pork roast behind you forever!

Cooking pork roast is not rocket science. All it takes is heat and time and you'll wind up with cooked pork. However if you want to cook a pork roast that is moist, tender and delicious there are some guidelines to follow.

The first step in the perfect pork roast formula is selecting the type of roast. Next on the agenda is determining the best cooking method for the roast you've selected.

This decision making process also works in reverse. If you know the cooking method you want to use you then decide on the cut of pork.

Probably the most important step in cooking today's pork is brining! This takes a little time planning to allow the roast to absorb the brine but it is well worth the effort.

Selecting the Roast

I'll have to admit that if I'm just hungry for pork roast my decision for the type of roast is whatever is on sale. Then I'll decide how to cook it based on what is best for that type.

If you don't want to use the "whatever is on sale method" then a little knowledge of pork roast is in order.

Most all pork roasts come from the shoulder and loin wholesale cuts. There are fresh ham roasts (the hind leg) but you will rarely see them in groceries. Also pork sirloin roasts are from the hind part of the loin and they fit the shoulder roast category.

Shoulder Pork Roasts

Roasts from the shoulder contain several different muscles along with connective tissue and a good amount of fat.

These roasts benefit from long slow roasting times that allow the connective tissue to break down. They are extremely flavorful due to the amount of fat.

Shoulder roast cuts include the whole shoulder, which is good for a crowd, Boston butt, the top of the shoulder and Picnic roasts from the bottom.

These roasts all might have different names in your grocery according to the cut.

Roasts from the shoulder are the cut of choice for recipes such as pulled pork.

Pork Loin Roasts

Roasts from the pork loin are the best roasts from the pig. They are single muscle roasts without much fat. These muscles are from the center of the back of the pig and get very little usage, which makes them tender.

Basically there are two main roasts from the loin. By far the most tender is the pork tenderloin. The mild pork flavor of the tenderloin lends itself to marinades to impart flavoring.

The pork loin roast has a slightly stronger pork flavor than the tenderloin and is extremely lean. It compares in leanness to chicken breast.

Brining Pork Roasts

Most all meat products will benefit from brining.

Brine is simply a solution of non-iodized salt and water. The meat has a less concentration of salt and water than the solution so Mother Nature takes over to equalize the two.

Basic brine is 1 cup of non-iodized salt to one gallon of water. But it doesn't stop there. All sorts of flavorings can be added to the brine and will be imparted to the roast.

A brined pork roast increases in weight because of the brining. The weight is all water. As the roast is cooked most of the water is cooked out but some remains resulting in a moist and tender roast.

The shoulder and sirloin roast will benefit from brining but they are just fine without it due to the fat content. For a pork loin roast, however, I consider brining essential because of its low fat content.

Cooking Pork Roast

Pork roasts are a little more forgiving when selecting a cooking method than their beef equivalent.

There are two basic methods for cooking meats. These two are the "moist heat" method and the "dry heat" method.

Moist heat simply means that there is a liquid included along with the roast in the cooking vessel.

The moist heat method is for cuts that are from the less tender sections of the animal. The moist heat assists in breaking down the fibers and tissue of the meat to yield a tenderer product.

Roasting in the oven, the crock-pot or even an electric skillet are ideal methods of applying heat to the roast during moist heat cooking. Either method should include a tight fitting heavy lid.

Pot roasts and braised roasts are examples of the moist heat cooking method.

The dry heat cooking method is the opposite of the moist heat method. No liquid is introduced during the cooking process.

Dry heat cooking should include a searing of some type for a crispy and flavorful exterior. You can sear the roast in a skillet or in an extremely hot oven for a short period of time.

Dry heat can be applied in the oven, on the grill or my favorite the smoker.

Pork Roast Cooking Times

Cooking time is critical for a moist and tender pork roast.

There are many variables to pork roast cooking times. Some of those variables include the type of roast, the size and thickness of the roast and the cooking temperature.

There are some rules of thumb for cooking time for the different roasts but at best they are only a guess.

A two to five pound pork loin roast cooked at 350 degrees f. will require roughly 20 to 30 minutes per pound.

Pork tenderloin in the one to two pound category will require the same 20 to 30 minutes per pound but at 425 degrees F. instead of 350 degrees.

A two to five pound Boston butt roast will require approximately 45 minutes per pound at 350 degrees F. The extra time is to allow the connective tissue to break down and the fat to melt and mingle with the roast.

The only sure way to know when your roast is done is to use a meat thermometer.

If you are roasting in the oven an oven thermometer is also recommended. Oven thermostats are notoriously inaccurate.

Like I said cooking pork roast is not rocket science. Following these guidelines, however, will yield a pork roast so moist and tender it will surely impress your guests and will definitely make your mother-in-law turn green with envy.

Red Velvet Cake

1 ½ cups sugar
½ cup shortening
2 eggs
1 cup buttermilk
1 teaspoon orange extract
1 teaspoon lemon extract
2 cups flour
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon red food coloring
1 teaspoon soda
1 teaspoon vinegar

Combine sugar, shortening, eggs, buttermilk, flavorings, flour, cinnamon, salt, and food coloring in mixer bowl; beat for 2 minutes. Add soda and vinegar; mix well. Spoon into 9 x 13-inch cake pan. Bake at 350 degrees for 35-45 minutes or until cake tests done.

Peach Fuzzy Navel Cake

1 - 16 oz. can peaches
½ cup peach schnapps
1 cup sugar
¼ cup orange juice
1 - 2 layer package yellow cake mix
1 - 4 oz. package vanilla instant pudding mix
4 eggs
2/3 cup oil
½ cup powdered sugar

Combine drained peaches, schnapps, sugar, and orange juice in covered container. Chill for 24 hours. Drain, reserving ¾ cup liquid. Puree peaches in food processor. Combine peach puree with cake mix, pudding mix, eggs, oil, and ½ cup reserved liquid in mixer bowl; mix well. Spoon into greased and floured bundt pan. Bake at 350 degrees for 40 minutes. Invert onto wire rack to cool. Blend powdered sugar and remaining ¼ cup reserved liquid. Drizzle over cake.

Here's a tip for chopping nuts, such as walnuts, in a food processor:

The first step is to pulse walnuts 1 cup at a time, with the shells removed of course, on chop four or five times. Then turn the food processor off and scrape the jar with a spatula. Return the chopped nuts to the food processing jar and pulse on chop two or three more times. If you like more coarsely chopped nuts, don't pulse them as many times or for as long. For best results, do not exceed 1 cup at a time in your food processor.

Now on to my favorite banana walnut muffin recipe!

Ingredients:

1 cup all-purpose flour

1/4 cup sugar

1-1/2 teaspoons baking powder

1/4 teaspoon cinnamon

1/8 teaspoon salt

1 small ripe banana, peeled and cut into 1-inch pieces

(The riper the banana, the sweeter it will be.)

1 large egg

1/4 cup skim milk

1/4 cup vegetable oil

1/2 to 1 cup shelled walnuts

1 teaspoon sugar

Preheat oven to 375ºF and line six muffin cups with paper liners, or grease muffin pan. Combine flour, sugar, baking powder, cinnamon and salt in a small bowl and put aside Place banana pieces in the food processor. Chop until smooth, usually 20-30 seconds. Scrape the food processor bowl with a spatula. Add egg, milk and oil and process until combined, about 10 seconds. Then add the walnuts and dry ingredients. Pulse in food processor until flour is just mixed in, about 3 - 4 times. (It's okay if the batter is lumpy and still has some dry flour may be left on top.

Fill prepared muffin cups almost to the top with batter and sprinkle tops with sugar. Bake until tops are lightly browned and a toothpick inserted in the center comes out clean, about 20 - 25 minutes. Remove from muffin pan and cool on wire rack. Makes six delicious muffins.

Cut squash in half lengthwise. Scrape out seeds and steam 30 minutes, or bake on foil, cut-side down, in 350 degrees F oven until tender. (If baking, it will take approximately 40-45 minutes.) Scrape out pulp and mash or beat in mixer or processor until smooth. Add butter, brown sugar, salt and pepper; set aside. Slice apples very thinly. In skillet, melt buttery spread and add apples. Sprinkle with sugar and cover, simmering until barely tender. Spread in an 8 or 9" casserole and spoon squash mixture evenly over apples.

TOPPING: Mix all ingredients (corn flakes, pecans, melted butter and brown sugar) and spread over squash and bake in 325 deg. oven for 12-15 minutes, or until lightly browned.

Pour the vegetable-milk mixture over the potatoes and sprinkle with the Gouda and bread crumbs. Place in the oven and bake for 20 minutes, until a crust forms on top. Remove from the oven and serve.

A quick search for recipes whole wheat banana bread will be up to a couple of possibilities. Everyone seems easy to replace only the refined white flour for whole wheat bread. Although the goal of eliminating refined grains is, there is little for the taste and texture of banana bread.

The biggest problem with simply substitute for white bread is whole wheat that is more dense and dry. If you do not consider to ensure that the banana bread to be too narrowand dry. My recipe for the flour evenly divided between two grains: wheat and oats. Wheat is a good, strong structure, while the taste of oats and softer feel.The absence of gluten in oats make them perfect for high-gluten wheat. Cook, like life, is all about balance.

I use honey to sweeten my most whole grain baked goods. There are two reasons for this. First, I think is the best sweetener can be used, as regards health and nutrition areaffected. 1 teaspoon baking powder

1 / 2 teaspoon sea salt

1 teaspoon cinnamon

1 / 4 teaspoon grated nutmeg

3 large or 4Very ripe bananas Media

1 / 2 cup walnut oil

2 large eggs

1 / 2 cup honey

2 teaspoons pure vanilla extract

Nuts 1 / 4 cup coarsely chopped

Directions

Add the banana mixture to the bowl with dry ingredients. Mix together until recently. Too much stirring will develop gluten and result in a hard bread.

TransferPut the dough into the pan with the bread and the chopped walnuts. Bake until a toothpick inserted in center comes out clean, about 1 hour. Allow to cool completely before serving.

Set oven control to roast. Trim fat from chicken. Put the chicken
Broiler pan rack. Sirloin Tips with 4-6 inches from heat 15-20 minutes, turning once, until juice is no longer pink when centers of pieces are cut thick. Cut into strips 1 / 4 inch and set aside. Place peppers and onion in blender or food processorProcessor. Cover and blend
At medium speed until smooth.

Mix pepper, broth, lemon juice, coriander, salt, pepper and

You should have a food processor if you have not already. In fact one day to go! From any device in my kitchen, is my absolute favorite, and I use it. In fact, I never put away. I have to make a small processor for instant purchases or vegetables and herbs and a large 14-cup processor for all kinds of wonderful inventions. So again, if you do not have one of these miracles, you need to get one.

Here are my top ten favorite things to do with foodProcessor.

1 Peanut Butter Biscuits, the world's simplest recipe: 1 cup sugar, 1 egg, 1 cup of peanut butter and a teaspoon of vanilla sugar, if desired. Throw it in your processor, make a whirl for a few seconds until well mixed. Scoop a tablespoon of dough and drop it on the scrap side of the bowl on a tray, on a baking sheet and smash with a fork to make cross-hatch design. Bake at 350 degrees for 7-9 minutes and you have great, gluten-free peanutButter cookies.

2 Other types of butter are definitely one of my favorites. In fact, I get ideas from many restaurants, permanently deleted after the new flavors of bread. Armed with my food processor, butter dishes that has never been so easy. My favorite is basil, garlic butter. Through the elaboration of a stick of butter with a few cloves of garlic, then I can somewhat 'crushed basil leaves and let stand in refrigerator for a week or so in an airtight container. Then there is the French bread andWine with dinner. Sometimes I even use it on grilled cheese with mozzarella, tomato slices and bacon. So delicious!

Make 3 sandwiches, steak and cold, but do not freeze any remaining steak in the freezer until firm but not frozen. Discs with the processor and then add a ladle, where you have to brown the onions and peppers. Put it on a sandwich bun, top with cheese, Jack, and enjoy. I know who leftover steak? Plan for this and throw a steak or two onGrill the next time.

4 One of my favorite applications for a food processor makes soup when I had a difficult day. The onion, garlic, milk, flour, chicken broth, broccoli, cheese and peppers can be easily combined for an excellent meal. After browning the onions and garlic, add all ingredients except milk and flour and cheese, cooking over medium heat for 10 minutes. Then combine with milk and flour and cook another 5 minutes, then let it cool whileAdd the cheese until it melts. In a food processor, and you have a smooth, creamy broccoli soup, cheese, which can relieve stress filled every day.

5 Want to make a great hollandaise sauce in a short time? Take ¾ cup of butter and melt. Then take three egg yolks, 1 tablespoon lemon juice, 1 tablespoon of water and a teaspoon of Dijon mustard and mix up in your blender, add the melted butter slows.
